Watermelon in Love

I've been drankin... Watermelon (and mint sorbet in my prosecco).

It's too darn hot in New York. I knew summer would hit us sooner or later and with the thunderstorm that rolled through yesterday afternoon, I think it's hit us soon. With my shirt sticking too my back on the subway last night and Queen Bey pounding through my headphones, I knew I needed something to cool me down. Forget the oven; I needed an icy cold drink. 

Cue the "Drunk in Love" inspiration. I woke up in the kitchen saying "how the hell did this [mess] happen?" Oh baby. Whatever; it was worth the dishes when I took a sip of this pink drink. 

It's no surprise that watermelon is a summer go-to. In it's peak season watermelon's juicy, fresh, and sweet flavors are divine. The colors are stunning. I, however, have a confession to make. I've always hated the texture. For reals, guys. The only fruit I can think of that's less appealing to me would be prunes and who the heck likes those. Like that slightly gritty, mushy stuff you bite into? I just do not get it. Me and a slice o' watermelon? We don't mix. 

That being said, puree that melon down to a nice smooth texture and add in some mint and I am SOLD. Mint makes everything more refreshing, am I right?  Watermelon mint sorbet is so simple to make and even easier to pop into a glass of chilled prosecco. "Just tell me how it's looking, babe."

The drink guys, I am talking about the drink. 

This week has started as one of those weeks where you wish you were in the week before or the next week, just any week but this week kind of weeks. I can tell you from experience there's always a song to make you feel better when you're having one of those weeks though. After making the mistake of choosing Adele for my commute into the office (hellooooo depression), Beyonce was far more appealing for my commute home. A good beat and a great rap verse can (temporarily) relieve you from a funk. I am a firm believer.

In fact, I am going to scoop myself another ball of sorbet and pour some prosecco. My rooftop is calling my name. Crank up that Bey and Jay for me... "Drunk in Looooooooooooove" (Promise I am not drunk, mom)


Watermelon Mint Sorbet

  • 4 cups watermelon, cubed and seedless
  • 2 tablespoons lime juice
  • 2/3 cup water
  • 2/3 cup sugar
  • 1/2 cup fresh mint leaves
  • pinch salt

Heat sugar, salt, and water in a large saucepan over medium heat until sugar is dissolved. Add in mint and bring down to a simmer for five minutes. Strain simple syrup and set aside to cool. 

In a large food processor puree watermelon and lime juice for a few minutes until smooth. Place in refrigerator to chill. 

Once both the puree and simple syrup are chilled whisk them together and pour into ice cream maker. Process according to ice cream maker instructions. For my Cuisinart model the sorbet took about twenty minutes to set. After it appears to thicken and churn less quickly, remove and place in an airtight container. Freeze for at least four hours before serving. Due to the icy nature of this sorbet, you will need to take it out of the freezer a few minutes before serving. Pink is the flavor. Enjoy with prosecco, champagne, Armand de Brignac (for you gangster wives), or on it's own.
