Summer Strawberry Cake

Seriously. Snap your fingers and you'll be done "making" this cake. This is the opposite of the last cake post. It'll take you just a couple ingredients and minutes to assemble instead of days to prepare.
Strawberries are perfectly in season this time of year and the most glorious red color. When I was about four years old I discovered I had a slight allergy to strawberries and by slight I mean I broke out in measles. I did grow out of my strawberry aversion but I never outgrew my love for anything strawberry flavored. Remember those grandma candies in the plasticky strawberry wrapper and gooey filling inside? Huge fan. Sometimes artificial flavoring is the bomb-dot-com.
Now, I am not normally one to promote store-bought cakes. They're often... well, unremarkable. But I have to say, sometimes it is just too darn hot to turn on the oven. Unless you've got an industrial AC unit in your New York apartment homemade cake is not worth the temperature sacrifice. This strawberry summer cake is something you can whip together for a summer barbecue or a light late night snack all without breaking a sweat! Now doesn't that sounds fabulous?!
Strawberry Summer Cake
- store bought angel food cake (I like Whole Foods)
- strawberry jam
- whipped cream (heavy whipping cream and 2 tbsp powdered sugar)
- pink food coloring
- 8-10 strawberries, sliced
Cut Angel food cake in half. Spread strawberry jam in the middle layer. Put top layer back on. Whip cream with powdered sugar until stiff peaks form. Do not over beat of the cream will start to get thick and chunky. Ew. Swirl in pink food coloring and spread over cake. Slice strawberries and decorate to your liking. DIG IN.
