Who wouldn't want a colorful cotton candy cake for their birthday?
When I look back at my past year, 27 certainly had its ups and downs. I moved across the country, briefly lived at home, started a new job, made new friends, fell in love, and have a new president of the United States... clearly it's been tumultuous. But most of all I look back and I am grateful.
After ruining my own surprise party last Tuesday, I was reminded how many friends and family I have near and dear to my heart. And to share cake with. After having spent my last birthday crying on the phone to my parents, confused about where my life was headed, well, this years festivities could not have meant more to me. I was reminded about all the love I have.

It's cheesy. I get it. But seriously, ladies and gents, I am so happy to have you readers (hi mom!) in my life. My friends and family give me so much love and support and encouragement to bake more beautiful, tasty things; even when I am going through ups and downs.
Given the political climate lately, I have not been in the best frame of mind and I needed a happiness reminder. It seems like every time I click on an article or watch the Today show, there's more depressing news to be had. I'm not here to convince you to change or talk politics or complain about everything that is wrong with American politics (SO MUCH IS WRONG), but I do want to send a reminder to myself that I am going into my 28th year with so much to be happy about. And this cake. I have beautiful, colorful cake!
Can we talk about this cake? It's filled with everything I love. Sprinkles, glitter, hearts, CoCoNuT, and too much butter. It's delicious. Dense but not too dense. Fluffy but not too light. Creamy but not overwhelming. I could go on but I am going to reign it in. Three funfetti layers (screams birthday), cotton candy Swiss meringue buttercream (whimsical), coconut curd (dreamy), and freshly spun cotton-candy. Gah! My mouth is watering just thinking about this magic. It's the perfect thing to whip up for a special birthday gal or guy... or yourself.
